The first contentment of my meeting with the tastes of Istanbul was within Ismet’s bistro, a poky spot of no sight on the corner of the hotel street, the main reason to have the luck to be paid a visit by my company. When I tried the Soup of the Day, I realized it was exactly the opposite, I was fortunate to find the most delicious soup prepared in Istanbul, and unlike Alice in Wonderland and her unsuccessful acquaintance with the Leg of Mutton, I felt no hesitation to be off-etiquette and ate it to the bottom. It is not by chance that I praise Ismet’s soup to the utmost; I had opportunities to try this traditional specialty at other places in the cosmopolitan city during my tour walks, with no ground for any comparison. Pureed creamy substance with a dense orange colour and spicy to measure aftertaste that always comes with plenty of fresh white bread with crispy crumbly crust, melting in the mouth, the two of them enough to satiate your hunger. The most curious moment of tasting was the unriddling of the basic product. Type of cereal or beans, chickpeas may be?!… Lentil soup, special sort of red lentils, pureed and flavoured to no recognition. Another proof that the most simple things can be the most fascinating and moreover, quite nutritive. Even though satisfied, your appetite for it remains wide-open.

Fish

The second that I recommend is the fish, which you can have as a main dish as well as an hors d’oeuvre. There are two essential approaches to satisfy the appetite in gastronomic sense, and numerous ways. Like every self-respecting sea city, Istanbul offers plenty of, pay special attention, fresh seafood. A convincing opportunity, in case you need to assure yourself, is visiting the Fish Market along the embankment in the Southern European part. This is an excellent way to combine a wonderful walk breathing sea air with food, which you can choose yourself. Besides the diverse amounts caught, of which your head can start to swim, there you will find quality as well, visible in the clear, constantly refreshed water and the pink-red gills of the fish, of course, if you also have nerves to stand such spectacle. If your kind of visit allows no self-preparation for your food, or you aim the pleasure to have dinner outside in good company and of similar service, look for a special fish restaurant then. There you will be able to view your menu “live” in an appetizing outlook and choose via your senses at the expense of imagination. A popular location for such kind of amusement, especially if you reside nearby the historic part of the city, are the restaurants under the Galata Bridge, where you can also have your seafood prepared for home with various garnishes and salads.

Turkish delight

What is there for dessert?! I almost exclude an existing way that you have missed to hear of the so famous Turkish delight, one of the symbols of our neighbours, but if for still more unfamiliar reason you have missed to taste it, do not lose more opportunities. You can find it, literally, at every nook and corner, but if you want to experience an explosion of colours and flavours, head for the Egyptian Bazaar, also in the same area by the Galata Bridge. You will be over-satisfied there by the rich selection of delight, and over-sweetened at the same time by indescribable variety of candies, nuts and spices. Even in case you buy nothing, the emotion of the views during this walk will reward you with unforgettable memories. If from so much sweetness, though, you are likely to lose sight, I then recommend an unconventional, still a healthier choice for a dessert, from the same starting point, and namely an evening walk to Taksim Square, famous for its bohemian atmosphere and open until late bars and cafes. The offer comes with an advice, do not go there by yourself, unless you rely on self-defense skills or look to get into troubles on purpose; a walk in the open and in good company is always the most recommendable choice for a pleasant experience, and in the situation would be the best.

Turkish tea and Red Wine

Even though used to the term “Turkish coffee”, the most popular drink among our neighbours is the Turkish tea. It is black and prepared is quite strong, hence it is recommended sweetened, as is its traditional consumption, regularly and in small amounts. Tea is kind of a social center, something familiar to us, to have “a cup of tea” is a reason for a company and conversation. You will meet it elsewhere, in the traditional venues such as tea rooms and cafes, as well as accompanying your hookah in the special places for this pleasure; you will be offered even on the ferry to the Princes’ Islands, to the Asian part of the city and backwards. There I have an amusing memory, which I keep from my travel to Istanbul and like to share with friends. Namely such glass of tea that I drank at one gulp without sugar managed to shake my head so strongly so I next had to fix it with the help of my favourite little green bottles of red wine, which I came across most accidentally in the monastery kitchen of Buyukada island. I have seen them only there, but I believe they can be found in a most ordinary liquor store in Istanbul as well. Unfortunately, I cannot recommend a brand or a label for I had their content failed to present before me duly with its name; we both fell in love at first sight and most naturally spoke on other topics, about sea and islands, romance, life. Life is wonderful, inevitably, when you have senses to feel, to emerge and watch from above waters, whatever the bottom; moreover, when you have a chance to share those intimate moments with other than the piece of green glass, through which you only break your view to the world when you half-empty it, with someone of your kind, with whom it is so sweet to wide-open your eyes as closing them.
